• 1½ cups quinoa
• 1 can unsweetened coconut milk
• 1 teaspoon kosher salt
2. Add quinoa and cook, stirring often, for about 5 minutes.
3. Add coconut milk, salt, and 1½ cups water and stir to combine.
4. Bring to a boil; reduce heat, cover, and simmer until quinoa is tender and liquid is evaporated, 20 to 25 minutes.
5. Let sit 10 minutes. Fluff with a fork.
